Hello everyone! Today, we’re making delicious sweet potato stick fries that will bring back fond childhood memories. Crispy on the outside and sweet on the inside – they’re incredibly tasty! Let’s start by preparing the sweet potatoes and getting ready for frying.

When peeling the sweet potatoes, try to cut the skin a bit thicker. If the sweet potatoes are a little dry, the skin might not peel off thinly. Don’t worry if they don’t look perfectly shaped; just peel them comfortably.

After peeling, slice the sweet potatoes into sticks about 0.7 to 1 cm thick. Slicing them too thinly can cause them to break apart during frying, so maintaining a good thickness is key. The sweet potatoes I’m using are small, so the sticks are shorter. If you use larger sweet potatoes, you can make longer sticks.

It’s crucial to rinse the cut sweet potato sticks in cold water to remove excess starch. You’ll see white starch coming out into the water. Rinse them thoroughly, changing the water two to three times.

After rinsing, shake off the excess water from the sweet potato sticks. Removing as much water as possible will help ensure the fries turn out crispy.

Next, lay the sweet potato sticks on a layer of paper towels, and then cover the top with more paper towels to completely dry them. This step is very important! If there’s residual moisture, it can cause oil to splatter dangerously when frying and can also make the fries soggy. Make sure to pat them dry thoroughly.

Now, let’s prepare the frying oil. Pour a generous amount of vegetable oil into a pot that isn’t too deep, and heat it over medium-low heat. To check the oil temperature, dip a chopstick (or skewer) into the oil. If small bubbles form around the chopstick and you see marble-like lines, the oil is at the right temperature for frying.

Add the prepared sweet potato sticks to the hot oil. Be careful not to overcrowd the pot, as this will lower the oil temperature significantly and prevent the fries from becoming crispy. Fry them in small batches, ensuring they don’t stick together.

When you first add the sweet potatoes, you’ll see a lot of bubbles covering the surface, making it hard to see the sticks. Don’t stir them immediately. Gently separate them if they stick together, and then let them cook undisturbed. As they cook, the bubbling will subside, and the sweet potatoes will start to brown.

Once the sweet potatoes are cooked and firm to the touch, try picking one up with your chopsticks. They are ready to be removed when they turn golden brown and the bubbling sound almost disappears. Keep an eye on the color to prevent burning.
