Main Ingredients

  • 1/2 medium radish (large size)
  • 1/2 handful dried anchovies (about 10-15 fish)
  • 4 sheets dried kelp (approx. 10×10 cm)
  • 1 stalk green onion
  • 1 pack store-bought dashima broth mix (or homemade broth)
  • 1 Tbsp chili seeds (optional, for added heat)

Seasoning Ingredients

  • 5 Tbsp soy sauce
  • 2 Tbsp red pepper flakes
  • 1 Tbsp minced garlic
  • 3 Tbsp corn syrup (adjust sweetness to taste)
  • 1 Tbsp sugar
  • 1 Tbsp cooking wine (or Cheongju)
  • 1 Tbsp sesame oil
  • A pinch of sesame seeds

Cooking Instructions

Peel the skin off half a medium-sized radish and cut it into large, bite-sized pieces. Aim for larger chunks as the radish will shrink during cooking.

Place the cut radish pieces into a deep pot. Add the store-bought broth mix, dried anchovies, dried kelp, and chili seeds on top of the radish. Pour in just enough water to partially cover the radish. Cover the pot and bring to a boil over high heat.

In a separate bowl, combine all the seasoning ingredients: soy sauce, red pepper flakes, minced garlic, corn syrup, sugar, cooking wine, sesame oil, and sesame seeds. Mix well to create the seasoning sauce. (Adjust the amount of corn syrup or sugar to your preference for sweetness. You can add more red pepper flakes if you like it spicier.)

Once the water in the pot with the radish begins to boil vigorously, pour the prepared seasoning sauce evenly over the radish. Gently stir to distribute the sauce.

Simmer over high heat for about 10 minutes, allowing the radish to absorb the flavors. During this time, add half a green onion, cut into large pieces. After 10 minutes, remove and discard the broth mix pack and any solid ingredients like anchovies, kelp, and chili seeds.

Reduce the heat to medium-low. Continue to simmer, uncovered, for another 15-20 minutes, or until the radish is tender and easily pierced with a chopstick. Periodically, spoon some of the flavorful braising liquid from the bottom of the pot over the radish pieces to ensure even seasoning.

Just before turning off the heat, drizzle in 1 tablespoon of sesame oil for extra fragrance and sprinkle with sesame seeds. Your delicious braised radish is now ready to be served! Enjoy it over warm rice.
