Main Ingredients- 100g prepared pollock skin
- Cooking oil (for frying)
Cooking Instructions
Step 1
First, let’s prepare the pollock skin. Trim any tail or fin parts with scissors for a clean finish. Then, cut the skin into bite-sized pieces (about 5-7 cm long) so they are easy to eat after cooking.
Step 2
Now, it’s time to give the pollock skin a crispy texture. Pour a generous amount of cooking oil into a pan and heat it over medium heat. Add the prepared pollock skin and fry until it becomes crispy. Once fried, transfer the pollock skin to paper towels to drain excess oil. This step ensures a wonderfully crunchy texture.
Step 3
Let’s make the delicious sauce! In a pan, combine 3 Tbsp soy sauce, 2 Tbsp cooking wine, 2 Tbsp rice wine, 1 Tbsp oyster sauce, 1 Tbsp minced garlic, 2 Tbsp gochugaru, and 3 Tbsp oligosaccharide. Place the pan over low heat and stir occasionally until the ingredients are well combined and start to simmer gently. The sauce will thicken slightly as it cooks.
Step 4
Add the fried and drained pollock skin to the sauce pan. Stir-fry over medium-low heat, ensuring the pollock skin is evenly coated with the sauce. It’s important to stir-fry quickly so that the sauce coats each piece of pollock skin beautifully and glistens.
Step 5
Finally, just before turning off the heat, sprinkle with toasted sesame seeds. The nutty aroma of the sesame seeds will enhance the overall flavor. Once everything is well combined and coated, your delicious Pollock Skin Stir-fry is ready! It’s great as a side dish with warm rice or a perfect accompaniment to a cold beer or makgeolli.
