Spicy Shrimp and Bean Sprout Fried Rice

This recipe was born out of a surplus of bean sprouts in my fridge! It’s a simple yet incredibly flavorful fried rice that’s perfect for using up those fresh veggies.

Ingredients

  • 3 Tbsp cooking oil
  • 1 handful scallions, thinly sliced
  • 4 dried red chilies (peperoncino), crushed
  • 5 frozen whiteleg shrimp, peeled and deveined
  • 2 Tbsp oyster sauce
  • 1 serving rice (warm rice)
  • 1 egg
  • A generous amount of bean sprouts (about 50-70g)

Cooking Instructions

Step 1

Heat a large skillet or wok over medium heat and add 3 tablespoons of cooking oil. Add the sliced scallions and crushed dried chilies. Stir-fry for about 1 minute until fragrant, allowing the spicy aroma and flavor of the chilies to infuse into the oil.

Once the scallions become fragrant, add the 5 prepared whiteleg shrimp. Increase the heat to high and quickly stir-fry the shrimp until they turn pink and opaque, which should take about 1-2 minutes. This high-heat cooking helps maintain a tender, juicy texture.

When the shrimp are mostly cooked, pour 2 tablespoons of oyster sauce around the edges of the pan. The sizzling sauce will caramelize slightly, enhancing its umami flavor. Gently toss everything together to combine the shrimp, scallions, and sauce.

Now, add 1 serving of warm rice and crack 1 egg directly into the pan. Use your spatula to break up the rice and stir-fry vigorously, ensuring the sauce and egg coat every grain. The egg will scramble as it cooks, adding a delightful richness.

Finally, add a generous handful of fresh bean sprouts. It’s crucial not to overcook the bean sprouts; stir-fry them over high heat for just 30 seconds to 1 minute until they are slightly tender but still retain their satisfying crunch. Overcooking will make them release too much water and become limp. Once the bean sprouts are perfectly crisp-tender, remove the pan from the heat and serve immediately. Feel free to season with a pinch of salt and pepper to taste.
