Ingredients- Minced beef or pork 2 cups
- Korean soy sauce (Jinganjang) 3 cups
- Sugar 1/3 cup
- Corn syrup or rice syrup (Mulyeot) 1/3 cup
- Toasted sesame seeds, ground (Kkaesogeum) 3/4 cup
- Ground perilla seeds (Deulkkaegaru) 1/4 cup
- Mirin (or cooking wine) 1/2 cup
- Black pepper a pinch
Cooking Instructions
Step 1
First, prepare all the ingredients needed for the recipe by measuring them out. Fresh ingredients are the foundation for a delicious all-purpose sauce!
Step 2
In a pan, add the minced meat (beef or pork). Sprinkle with mirin (or cooking wine) and a pinch of black pepper. Cook over medium heat until the meat is no longer pink and its moisture has significantly evaporated. If you have any leftover soju, cheongju, or mihyang (rice wine/flavor enhancer), you can use those as well (they are interchangeable with mirin).
Step 3
It’s crucial to cook the meat until all the moisture has evaporated and the meat crumbles into separate pieces. Use a spatula to break up any clumps as you stir-fry. This step helps to remove any gamey odor from the meat and results in a cleaner-tasting soy sauce.
Step 4
Once the meat is nicely browned and dry, add the Korean soy sauce, sugar, corn syrup, ground toasted sesame seeds, and ground perilla seeds to the pan. Adding all the remaining ingredients at once makes the process more convenient.
Step 5
After adding all ingredients, bring the mixture to a boil over medium heat. Once it starts simmering, immediately turn off the heat. Allow it to cool completely, then transfer it to an airtight container and store it in the refrigerator. This homemade all-purpose savory soy sauce can be kept fresh in the refrigerator for about 7-10 days. If you wish to store it for a longer period, you can re-boil it once more before storing.
