- 1/2 cup pancake mix
- Vegetable oil, for frying
Seasoning & Topping- Parmesan cheese powder, to taste
- Parsley flakes, to taste
- Parmesan cheese powder, to taste
- Parsley flakes, to taste
Cooking Instructions
Step 1
You can use the sweet potato with its skin on. Wash it thoroughly under running water. If there are any blemishes or soft spots, carefully trim them off with a knife.
Step 2
Shred the sweet potato into very thin strips. Thinner shreds will result in a crispier pancake and cook faster. Using a mandoline slicer can make this process easier.
Step 3
Lightly rinse the shredded sweet potato in cold water to remove excess starch. This helps achieve a cleaner flavor and crispier texture. Drain well in a colander, ensuring all excess water is removed.
Step 4
Add the pancake mix to the drained sweet potato shreds and toss gently to coat evenly. Using pancake mix is convenient as it’s already seasoned and tastes great. If you’re using all-purpose flour, add a pinch of salt to the flour before mixing.
Step 5
Heat a generous amount of vegetable oil in a skillet over medium heat. Add the coated sweet potato mixture and spread it evenly across the pan. Avoid making it too thick for even crispiness.
Step 6
Cook over medium-low heat until the bottom side of the sweet potato shreds is golden brown and crispy. Ensure the bottom is well-cooked before flipping to prevent the pancake from breaking.
Step 7
Carefully flip the pancake and cook the other side until it’s also golden brown and crispy. The natural sugars in the sweet potato will caramelize, enhancing the flavor.
Step 8
Once both sides are perfectly golden and crispy, transfer the finished sweet potato pancake to a serving plate. Generously sprinkle with Parmesan cheese powder and parsley flakes for a delicious, savory, and sweet finish. Enjoy immediately while warm for the best texture!
