Lately, I’ve become quite fond of squid, so I find myself buying it frequently, whether it’s dried or fresh. This time, I decided to make a simple yet flavorful side dish using dried squid: ‘Dried Squid and Cheongyang Pepper Stir-fry’. The dried squid available these days isn’t as tough as it used to be, making it enjoyable even to eat as is. When prepared as a stir-fry, soaking it briefly before cooking results in a tender texture that’s incredibly delicious. Main Ingredients- 1 and a half dried squids
- 1 pack of Cheongyang peppers (or similar mild green chili peppers)
Seasoning Ingredients- 3 Tbsp soy sauce
- 2 Tbsp sugar
- 1 tsp olive oil
- Minced green onion (scallion)
- Toasted sesame seeds
- Black pepper
- Sesame oil

Cooking Instructions
Step 1
Rinse the dried squid thoroughly and soak it in cool water for about 15-30 minutes until it softens. Be careful not to soak for too long, as it might lose its flavor.
Step 2
Wash the Cheongyang peppers under running water, remove the stems, and cut them into bite-sized pieces (about 3-4 cm or 1.5 inches). If the peppers are large, you can slice them in half lengthwise.
Step 3
Gently pat the soaked dried squid dry and cut it into bite-sized pieces (about 2-3 cm or 1 inch) using scissors or a knife. Place the cut squid into the pan or wok along with the prepared Cheongyang peppers.
Step 4
Heat 1 teaspoon of olive oil in a pan or wok over medium heat. Add the cut Cheongyang peppers and dried squid, and stir-fry them together. Cook until the squid is lightly cooked and the peppers begin to soften.
Step 5
Once the squid and peppers are partially stir-fried, add 3 tablespoons of soy sauce, 2 tablespoons of sugar, and a pinch of black pepper. Continue to stir-fry, allowing the sauce to thicken and coat the ingredients, creating a glossy finish. Adjust the heat as needed to prevent burning.

When the sauce has nicely coated the squid and peppers and has a glossy sheen, add a little minced green onion, toasted sesame seeds, and a drizzle of sesame oil for extra flavor.
