Step 1
The possibilities for curry ingredients are endless! Feel free to use whatever vegetables you have on hand or ingredients you enjoy. You can use a mild curry for kids or add some spice for adults. Adjust the types and quantities of ingredients based on your preference and what you have in your refrigerator.
Step 2
Wash or trim all the prepared ingredients, including potatoes, sweet potatoes, carrots, onions, king oyster mushrooms, and ham. Then, chop them into bite-sized pieces. Cutting the vegetables to similar sizes will help them cook at a consistent rate, which is ideal.
Step 3
Heat a deep pan or wok over medium heat, add a little cooking oil, and sauté the chopped vegetables (potatoes, sweet potatoes, carrots, onions) first. Sautéing them in oil helps develop their flavor. Add a little water intermittently while sautéing to prevent burning and to help the vegetables cook until tender. The curry will become flavorful as the onions turn translucent.
Step 4
Once the vegetables are adequately cooked and tender, add the sliced ham and king oyster mushrooms and sauté them together. The fat and flavor from the ham will seep into the vegetables, making them even more delicious. Now, to account for the curry thickening, add 250ml of water and bring it to a boil. Using broth instead of water will result in a richer flavor.
Step 5
When the liquid comes to a boil, reduce the heat to low and add 2 cubes of solid curry roux. Stir with a spatula or ladle to ensure the curry dissolves completely without lumps. Continue to simmer for about 5-7 minutes, or until the curry thickens and all the ingredients are coated in the delicious sauce. Your flavorful curry is ready!
Step 6
Serve a generous portion of warm rice in a bowl. You can adjust the amount of rice to your liking. You can either pour the curry generously over the rice or artfully arrange it around the edge of the rice.
