Delicious Creamy Pasta Made at Home

Pasta & Vegetables- 150g Pasta (e.g., spaghetti, fettuccine)
- 1/2 head Broccoli
- 1 Shiitake mushroom
- 1/2 Onion
- 1/2 Tomato
- 2 cloves Garlic
- 1 Green chili pepper (optional, for a touch of heat)
- 20g Spam (or bacon, for an alternative protein)
Sauce & Seasonings- 2 slices Processed cheese
- 1 Tbsp Minced garlic
- 1 cup (200ml) Milk
- 2 Tbsp Butter
- A pinch of Herb salt
- A pinch of Black pepper
- 1 Tbsp Soy sauce

Cooking Instructions
Step 1
Start by bringing a generous pot of water to a boil. Add the 150g of pasta and spread it out to prevent sticking. Cook for approximately 6 minutes, which is about 1 minute less than the package instructions, until al dente. (It will cook further in the pan.)
Step 2
If you have a 300g package of pasta, this recipe uses half of it. Store the remaining half in an airtight container in the refrigerator for another meal.
Step 3
Drain the cooked pasta in a colander. Reserve about 1/2 cup of the pasta water; it’s useful for adjusting the sauce consistency later.
Step 4
Heat a large skillet over medium heat and melt 1 tablespoon of butter. Once melted, add the 2 thinly sliced garlic cloves and sauté until fragrant, being careful not to burn them. The garlic aroma will enhance the flavor.
Step 5
Add the broccoli, cut into bite-sized florets, and the sliced shiitake mushroom to the skillet. Sprinkle with herb salt to season evenly as they cook.
Step 6
Add the remaining 1 tablespoon of butter to the pan. Continue to cook over medium-low heat until the vegetables are lightly browned and tender. This allows the richness of the butter to infuse into the vegetables.
Step 7
In a separate pot or the same skillet, sauté the minced onion until softened. Then, add the cooked pasta and about 1/2 cup of the reserved pasta water. Add all the sautéed vegetables from the skillet and mix well.
Step 8
Add 1 tablespoon of soy sauce, a pinch of black pepper, and the 2 slices of processed cheese. Stir well until the cheese melts, making the sauce creamy and rich. Ensure everything is thoroughly combined.
Step 9
Toss in the finely diced tomato (1/2 tomato). Stir gently. The fresh acidity of the tomato balances the richness of the cream sauce.
Step 10
Finally, add the 1 tablespoon of minced garlic, the chopped green chili pepper, and the diced Spam. Stir everything together one last time until well combined. Your delicious creamy pasta is ready to serve!
