Seolleongtang (Oxtail Soup)

Ingredients- 1.5kg Oxtail (Kneecap bone)
- 600g Beef Brisket or Shin
- 1 Onion
- 2 Green Onions
- 15 cloves Garlic
- Chives (for serving with boiled meat)
Boiled Meat Dipping Sauce- 5 Tbsp Soy Sauce
- 2 Tbsp Vinegar
- 1 Tbsp Water
- Mustard to taste (optional)

Cooking Instructions
Step 1
Begin by thoroughly rinsing the oxtail and beef brisket/shin under cold running water. Then, soak them in fresh cold water for about 3 hours to half a day to remove any residual blood. Changing the water occasionally will help in effectively draining the blood. Place the soaked oxtail and meat in a large pot. Add enough water to generously cover the ingredients. Bring the water to a rolling boil, then simmer for another 3 minutes before turning off the heat. Carefully lift out the oxtail and meat with a sieve, and discard the boiling water. Rinse the oxtail again under running water to remove any remaining impurities.
Step 2
Return the rinsed oxtail and meat to a clean pot. Pour in plenty of fresh water. Add the prepared onion, green onions, and whole garlic cloves to the pot. Simmer these ingredients together to infuse the broth with aromatic flavors.
Step 3
While simmering, continuously skim off any foam and fat that rises to the surface. This step is crucial for achieving a clear and clean-tasting broth. Once the onion, garlic, and green onions become very soft and tender, remove them from the pot. The beef brisket or shin should be tender after about 1-2 hours of simmering; carefully remove it at this point as it will be served as boiled meat (suyuk). Set the removed meat aside.
Step 4
Now, let the oxtail continue to simmer and break down. I simmered mine for about five hours. The longer you simmer, the richer and more concentrated the broth will become. If you wish to enjoy the Seolleongtang immediately after removing the boiled meat, you can certainly do so. Prolonged simmering will yield a deeply flavorful and satisfying broth. Your delicious Seolleongtang is now ready!
Step 5
Let’s plate the boiled meat first. Slice the tender oxtail and brisket into bite-sized pieces and arrange them attractively on a large serving platter. Adding fresh chives alongside makes for a visually appealing and even more nourishing presentation.

This boiled meat is incredibly sweet and delicious! Even children who are usually hesitant to drink broth will likely devour this tender meat. It’s a perfect way to fill up on a satisfying meal.
Step 7
For an enhanced flavor experience, prepare a dipping sauce. Mix 5 tablespoons of soy sauce with 2 tablespoons of vinegar and 1 tablespoon of water. Add mustard to your preference for a delightful kick. Dipping the meat into this sauce creates an explosion of umami that will tantalize your taste buds.
