Yeolmu Dongchimi Noodles Ingredients

  • 1 serving of somyeon noodles (approx. 100g)
  • 224g dongchimi broth (approx. 1 cup)
  • 96g naengmyeon broth (approx. 1/2 cup)
  • Adequate amount of yeolmu kimchi (cut into bite-sized pieces)
  • 1/4 cucumber (thinly julienned)
  • A little sesame seeds (for garnish)
  • A little mustard (optional)

Cooking Instructions

First, prepare the basic ingredients for the noodles. Measure out one serving of somyeon noodles, and measure the dongchimi broth and naengmyeon broth. Cut the yeolmu kimchi into bite-sized pieces, and wash the cucumber, remove the seeds, and thinly julienne it. Also, prepare sesame seeds for garnish and mustard if you prefer.

Bring a generous amount of water to a rolling boil in a large pot. Once boiling, carefully spread out the somyeon noodles so they don’t clump together. Stir occasionally as they cook to prevent sticking. When the noodles start to puff up and boil over, add about one cup of cold water. This helps the noodles cook to a perfectly chewy texture.
