With simple ingredients, you can create a satisfying and nutritious meal. This recipe is perfect for a quick yet special meal that will make your baby’s dining time even more enjoyable.
Main Ingredients- Rice noodles for 1 serving (prepare in bite-sized pieces suitable for your baby)
- 1 Egg
- 5g Onion (finely minced or julienned)
- 5g Carrot (finely minced or julienned)
- 5g Zucchini (finely minced or julienned)
Cooking Instructions
Step 1
First, prepare the carrot, onion, and zucchini to add color to the bibim guksu. Finely julienne or mince them into small pieces that are easy for your baby to eat. If the vegetables are too large, your baby might have difficulty chewing them.
Step 2
Lightly grease a heated pan with cooking oil. Add the prepared carrots and stir-fry over medium heat until they become tender. Stir-fry sufficiently to bring out the natural sweetness of the carrots.
Step 3
In the same pan used for carrots, add the onions and stir-fry until they become translucent. The sweetness of the onions will help stimulate your baby’s appetite.
Step 4
Finally, add the zucchini and stir-fry just until it softens slightly. Be careful not to overcook it, as it can become mushy.
Step 5
Prepare another small pan or wok. Whisk the egg and pour it in. Cook slowly over low heat. Be cautious as high heat can burn the egg. Once cooked, let it cool slightly, then cut it into pieces suitable for your baby (e.g., thinly julienned or crumbled into small pieces).
Step 6
Now, it’s time to cook the rice noodles. Add the rice noodles to a pot of boiling water and cook according to the package instructions, or until they reach a tender consistency that your baby can easily eat. Avoid overcooking, as the noodles can become mushy. Rinsing them under cold water after draining will make the noodles chewier.
Step 7
In a large bowl, place the drained rice noodles. Add the soy sauce, sesame oil, and minced garlic. You can add a tiny pinch of salt for seasoning if desired (it’s recommended to use low-sodium soy sauce and omit salt for babies). Use chopsticks or a spoon to thoroughly mix the noodles with the seasonings.
Step 8
Arrange the stir-fried carrots, onions, zucchini, and the prepared egg garnish beautifully on top of the well-mixed noodles. The vibrant colors will surely capture your baby’s attention! Your delicious bibim guksu is now complete. Enjoy a happy mealtime with your baby!
