Ingredients- 500g thinly sliced pork belly
- 1.5 medium onions
- 1 green onion
- 2 Tbsp gochujang (Korean chili paste)
- 1.5 Tbsp soy sauce
- 1 Tbsp sugar
- 2.5 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp mirin (cooking wine)
- 2/3 Tbsp minced garlic
- Pinch of black pepper
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
Peel and thoroughly wash 1.5 medium onions. Slice them thinly into strips about 0.5cm thick. This will help mellow their sharpness and bring out their sweetness.
Step 2
Wash 1 green onion and separate the white and green parts. Slice the white part diagonally into about 0.5cm thick pieces. Set aside the green parts for later to add freshness. You can slice them diagonally or into rounds, according to your preference.
Step 3
In a large pan or wok, add the 500g of thinly sliced pork belly. Sprinkle the sliced white parts of the green onion and a pinch of black pepper over the pork. Start cooking over medium-high heat, rather than high heat.
Step 4
Pork belly cooks very quickly due to its thinness. If the slices are rolled up, gently spread them out with chopsticks or a spatula. This helps the sauce penetrate better and ensures even cooking. Once the pinkness of the pork disappears, you’re ready for the next step.
Step 5
Now, add all the sauce ingredients to the pan with the cooked pork: 2 Tbsp gochujang, 1.5 Tbsp soy sauce, 1 Tbsp sugar, 2.5 Tbsp gochugaru, 1 Tbsp mirin, and 2/3 Tbsp minced garlic. Stir-fry quickly over high heat for about 1-2 minutes, ensuring all the sauce ingredients are evenly mixed with the pork belly. Be careful not to burn the sauce.
Step 6
Continue stir-frying until the sauce coats the pork well. Then, add the sliced onions and stir-fry for another 1-2 minutes, just until the onions soften slightly. If you prefer a crispier onion texture, cook for a shorter time; for a softer texture, cook a little longer.
Step 7
