Ingredients- 3 Purple sweet potatoes
- 1/4 Apple
- Red bell pepper
- Orange bell pepper
- Yellow bell pepper (small amounts of each)
- 3 Tbsp Milk
- Pinch of salt
- Pinch of black pepper
- 6 Morning buns
Cooking Instructions
Step 1
First, wash the purple sweet potatoes thoroughly. You can steam them or bake them in the oven until tender. Today, we’re baking them to achieve that delicious roasted sweet potato flavor and aroma. (Bake at approximately 200°C / 400°F for 30-40 minutes, adjusting time based on potato size.)
Step 2
Finely dice the bell peppers (red, orange, and yellow) and the apple. Removing the seeds from the bell peppers is recommended. Aim for small, uniform pieces so they mix well with the sweet potato mash.
Step 3
While the baked purple sweet potatoes are still warm, carefully peel them. Use a fork or a potato masher to mash them until smooth. Mashing while warm makes it much easier to achieve a lump-free, creamy texture.
Step 4
Add 3 tablespoons of milk to the mashed sweet potato and mix gently. Adjust the consistency by adding more or less milk until it reaches your desired thickness – it should be thick enough to hold its shape inside the bun.
Step 5
Combine the diced apples and bell peppers with the mashed sweet potato mixture. Stir everything together thoroughly to ensure the ingredients are evenly distributed. This creates a delicious salad with a wonderful mix of textures and fresh flavors.
Step 6
Lightly season the salad with a pinch of salt. Add freshly ground coarse black pepper for an extra layer of aroma and flavor. It’s best to enhance the natural flavors of the ingredients rather than overpowering them with strong seasoning.
Step 7
Prepare the morning buns by carefully slicing off the top portion or cutting about two-thirds of the way down into the bun to create an opening for the filling. Gently scoop out some of the interior if needed, being careful not to break the bun. Generously fill the prepared buns with the purple sweet potato salad. Your beautiful and nutritious ‘Purple Sweet Potato & Apple Salad with Morning Buns’ is now ready to enjoy!
