  • 1/2 Green Onion (Scallion)

Special Bulgogi Marinade

  • 450ml Water
  • 9 Tbsp Soy Sauce
  • 4.5 Tbsp Brown Sugar
  • 4.5 Tbsp Corn Syrup (or Rice Syrup)
  • 1.5 Tbsp Mirin (or Rice Wine)
  • 3 Tbsp Sesame Oil
  • 2 Tbsp Grated Onion
  • 2 Tbsp Grated Apple
  • 2 Tbsp Minced Garlic
  • 1/4 Tbsp Grated Ginger (or a pinch of ginger powder)
  • 1/4 Tbsp Black Pepper

Cooking Instructions

Prepare 1kg (approx. 2.2 lbs) of beef, thinly sliced for Bulgogi. To remove any gamey smell and ensure tenderness, it’s important to drain the blood. You can pat it dry thoroughly with paper towels, or soak it in cold water for about 30 minutes and then drain well. (Optional: For even better flavor and texture, you can refrigerate the beef after draining for overnight.)

Let’s make the delicious Bulgogi marinade! In a bowl, combine 450ml water, 9 Tbsp soy sauce, 4.5 Tbsp brown sugar, 4.5 Tbsp corn syrup, 1.5 Tbsp mirin, and 3 Tbsp sesame oil. Mix them well. Then, add 2 Tbsp grated onion, 2 Tbsp grated apple, 2 Tbsp minced garlic, 1/4 Tbsp grated ginger, and 1/4 Tbsp black pepper for extra flavor. Stir everything together until the marinade is smooth.

Just before you’re ready to cook, add the beef to the prepared marinade and gently mix it with your hands. Ensure the meat is evenly coated. Be careful not to marinate for too long, as this can make the meat mushy.

Heat a pan over medium-high heat. Add the marinated beef and stir-fry quickly over high heat. Beef can become tough if overcooked, so cook it just until the surface is browned and the juices start to appear. This quick cooking method is key to a tender Bulgogi.
