Warm Up Instantly: Speedy Seafood and Radish Soup for Chilly Mornings
When the morning air starts to get crisp, there’s nothing quite like a warm bowl of soup to invigorate your day. This quick and easy Seafood and Radish Soup is perfect for such moments. Using frozen seafood makes it incredibly convenient, and its clear, deep broth is incredibly comforting, providing the energy you need to face the day.
Ingredients- 100g frozen mixed seafood (shrimp, squid, clams, etc.)
- 50g radish (about 1/4 small radish)
- 1/2 stalk green onion
- 1 red chili pepper
- 4 cups (800ml) anchovy and kelp broth
- 2 tablespoons fish sauce (anchovy extract)
- 1/2 tablespoon minced garlic (or 2-3 cloves whole garlic)
Cooking Instructions
Step 1
First, prepare a flavorful broth by simmering anchovies and kelp in cold water. Once the broth begins to boil, remove the kelp. Continue to simmer the anchovies for another 2-3 minutes, then strain them out. This process yields a cleaner tasting broth. Add the thinly sliced radish to the prepared broth and bring to a simmer over medium heat. Once the radish begins to turn translucent, add the frozen seafood. Be careful not to overcook the seafood, as it can become tough; cook just until it’s done.
Step 2
When the radish and seafood are cooked to your liking, season the soup with fish sauce. If fish sauce is unavailable, you can substitute with soy sauce or salt. For added depth of flavor, stir in the minced garlic. Finally, add the diagonally sliced green onion and the deseeded, thinly sliced red chili pepper. Simmer for another moment. Adding chili peppers not only enhances the visual appeal but also adds a subtle kick to the broth, making it even more refreshing.
Step 3
Ladle the soup into bowls. Behold, your warm and refreshing Seafood and Radish Soup is ready! It’s the perfect comforting meal, ideal for pouring over rice, to warm you up on a chilly day.
