Ingredients

  • Pasta, 1 serving (approx. 80-100g)
  • Minced garlic, 1 Tbsp
  • Chicken stock, 1 Tbsp
  • Seaweed (roasted), 1 handful
  • Olive oil, 2 Tbsp
  • Pasta water, 1 ladleful

First, prepare one serving of pasta (about the size of a 500 won coin). Bring a generous pot of water to a boil with a pinch of salt. Add the pasta and cook for about 10-11 minutes until al dente. It’s helpful to reserve about one ladleful of the pasta cooking water (pasta water) before draining; you’ll use it later when sautéing the pasta. (Tip: Adding 1 Tbsp of olive oil to the boiling water can help prevent the pasta from sticking and make it more al dente, but it’s perfectly delicious without it!)

While the pasta is cooking, heat 2 Tbsp of olive oil in a wide pan over medium-low heat. Add 1 Tbsp of minced garlic and sauté lightly, being careful not to burn it, until fragrant. (Tip: If you’re making this for a child, you can adjust the amount of garlic or omit it if preferred.)

Once the garlic releases its aroma, add the drained cooked pasta directly to the pan. Pour in one ladleful of the reserved pasta water and toss gently to coat the pasta with the garlic and oil. Next, add 1 Tbsp of chicken stock and mix again. The chicken stock is key to adding depth of flavor to the pasta.

Sauté lightly for a moment to allow the chicken stock to coat the pasta strands. Then, crumble about a handful of roasted seaweed over the pan and mix it in generously. Stir quickly to distribute the nutty aroma and taste of the seaweed throughout the pasta. The more finely you crumble the seaweed, the better it will infuse into the pasta.
