Stir-Fried King Oyster Mushrooms with Oyster Sauce

This is a super simple mushroom side dish made by stir-frying chewy king oyster mushrooms and crisp vegetables with an oyster sauce seasoning. Anyone can easily follow along to create a wonderful meal even on busy days.

Main Ingredients

  • 2 King Oyster Mushrooms (approx. 150g)
  • 1 bunch Chives (approx. 50g)
  • 30g Carrot

Seasoning & Other Ingredients

  • A little cooking oil (1-2 Tbsp)
  • 1 Tbsp Oyster Sauce
  • 0.5 Tbsp Toasted Sesame Seeds
  • 1 pinch Black Pepper

Cooking Instructions

Prepare all the ingredients needed for today’s dish. Wash and get ready the fresh king oyster mushrooms, chives, and carrot.

Cut the chives into lengths of about 3-4cm. Julienne the carrot into thin strips similar in length to the chives for a better texture.

Trim off the tough ends of the king oyster mushrooms and then julienne them into thick strips. Be careful not to cut them too thinly, as they might break apart during stir-frying.

Add 1 pinch of salt and 1 Tbsp of sesame oil to the julienned king oyster mushrooms for seasoning.

Gently mix with your hands to ensure the seasoning is evenly distributed on the mushrooms. Let it sit for about 5 minutes to allow the flavors to meld.

Now it’s time to stir-fry. Heat a pan over medium heat, add about 1-2 Tbsp of cooking oil, and stir-fry the julienned carrots for about 1 minute until slightly tender. Then, add the seasoned king oyster mushrooms and stir-fry for just 10 seconds. Immediately add 1 Tbsp of oyster sauce and continue to stir-fry over high heat for about 1 minute until the mushrooms are well coated with the sauce.

Finally, add the prepared chives and stir-fry quickly over high heat for just 5 seconds. It’s important not to overcook the chives, as they can become mushy; maintaining their crispness is key. Turn off the heat and sprinkle in 0.5 Tbsp of toasted sesame seeds and 1 pinch of black pepper.
