Gogi Jijimi: A Delicious Savory Pancake That Pairs Perfectly with Makgeolli
We made Gogi Jijimi, the perfect savory pancake to enjoy with makgeolli on a rainy day! Its delightful texture and rich flavor make it a must-try.
Ingredients- 200g ground pork
- 1 cup pancake mix (buchim garu)
- 1/3 cup tempura powder (twigim garu)
- 1 Tbsp glutinous rice flour (chapssal garu)
- 3 Tbsp minced green onion
- 1/4 onion, finely minced
- 3 Tbsp minced carrot
- 200cc water
- 1 Tbsp soy sauce
- 0.5 Tbsp mirin (rice wine)
- 0.5 Tbsp minced garlic
Cooking Instructions
Step 1
First, finely mince the vegetables that will add flavor and texture to your Gogi Jijimi. Dice about 1/4 of an onion very finely using a knife or a food processor. Finely mince the carrots as well, using a similar amount.
Step 2
In a large mixing bowl, add the ground pork (200g) as the base. Then, combine all the prepared ingredients: pancake mix, tempura powder, glutinous rice flour, minced green onion, minced onion, minced carrot, soy sauce, mirin, and minced garlic.

Now, let’s make the batter. Pour 200cc of water into the bowl gradually. Using chopsticks or a whisk, stir the mixture in one direction until all ingredients are well combined and form a smooth batter. The glutinous rice flour will contribute to a delightful chewy texture.
Step 4
Heat a generous amount of cooking oil in a frying pan over medium heat. Once the oil is hot, ladle portions of the batter into the pan, similar to making a pancake or fritter. Fry until golden brown and crispy on both sides, almost like deep-frying. When flipping, be careful: use a spoon to gently lift one side of the pancake, then slide a spatula underneath and carefully flip it over the pan. Trying to flip it solely with a spatula can cause oil splashes or the pancake to break apart.

Although it may resemble fish cake, this is delicious Gogi Jijimi! It boasts a wonderful chewy texture and savory pork flavor with every bite.
