Tender and Creamy Chicken Breast Sandwich
Moist Chicken Salad Sandwich Recipe: Say Goodbye to Dry Chicken!
Adding mashed hard-boiled eggs to chicken breast salad makes it incredibly tender, creamy, and rich, far from being dry. This is a highly recommended dish for a weekend brunch. Enjoy a delightful meal that’s perfect for special occasions or a light bite.
Main Ingredients- 150g cooked chicken breast
- 3 eggs
- 4 slices of bread
- 4 slices of cheddar cheese
- 5 black olives
- 2 Tbsp dried cranberries
- Cream cheese, to taste
Mayonnaise Dressing- 2 Tbsp finely chopped onion
- 2 Tbsp finely chopped pickles
- 3 Tbsp mayonnaise
- 1 Tbsp honey mustard
- 3 Tbsp shredded cheese (optional, Parmesan cheese can be substituted)
- 2 Tbsp fresh lemon juice
- 0.5 Tbsp dried parsley flakes
- Pinch of black pepper
- 0.5 Tbsp sugar
- 1 tsp wasabi (Japanese horseradish)
- 1 tsp salt
- 2 Tbsp finely chopped onion
- 2 Tbsp finely chopped pickles
- 3 Tbsp mayonnaise
- 1 Tbsp honey mustard
- 3 Tbsp shredded cheese (optional, Parmesan cheese can be substituted)
- 2 Tbsp fresh lemon juice
- 0.5 Tbsp dried parsley flakes
- Pinch of black pepper
- 0.5 Tbsp sugar
- 1 tsp wasabi (Japanese horseradish)

Cooking Instructions
Step 1
To hard-boil the eggs, place them in a pot with 2 Tbsp of vinegar and 1 Tbsp of salt. Add enough water to cover the eggs completely, then cover the pot and bring it to a boil over high heat.
Step 2
Once the water reaches a rolling boil, immediately turn off the heat. Keep the lid on and let the eggs sit in the hot water for 12 minutes to cook through. This method ensures perfectly cooked, tender eggs.
Step 3
After 12 minutes, carefully remove the boiled eggs and place them in a bowl of cold water for about 5 minutes to cool. This helps to easily peel the shells and results in perfectly hard-boiled eggs. (For detailed egg-boiling instructions, see @7003676)
Step 4
Shred the pre-cooked chicken breast meat along the grain. For tips on how to boil chicken breast so it stays moist, please refer to recipe @7008566.
Step 5
Thinly slice the black olives. Finely chop the onion and pickles. Have the dried cranberries ready.
Step 6
In a mixing bowl, combine the shredded chicken breast and the hard-boiled eggs. Mash the eggs with a fork. Add the prepared dried cranberries, chopped onion, and chopped pickles. In a separate small bowl, mix together the dressing ingredients: 3 Tbsp mayonnaise, 1 Tbsp honey mustard, 3 Tbsp shredded cheese, 2 Tbsp lemon juice, 0.5 Tbsp parsley flakes, a pinch of black pepper, 0.5 Tbsp sugar, 1 tsp wasabi, and 1 tsp salt. Pour this dressing over the chicken and egg mixture and toss gently until everything is well combined. Using shredded cheese adds a nice nutty flavor, but Parmesan cheese is also a good alternative. You can omit the cheese if preferred, but it does enhance the creaminess.
Step 7
Lightly toast the bread slices. Melt 1 Tbsp of butter in a non-stick skillet over medium-low heat. Toast each side of the bread slices until they are golden brown and slightly crispy, providing a nice texture contrast.
Step 8
Once toasted, stand the bread slices upright. This helps maintain their crispiness until you’re ready to assemble the sandwiches.
Step 9
Assemble the sandwiches by spreading a thin layer of cream cheese on one side of a toasted bread slice. Place a slice of cheddar cheese on top of the cream cheese. Generously spoon the prepared chicken salad mixture over the cheddar cheese. Top with another slice of toasted bread to complete the sandwich.
