Tender Chicken Breast and Fresh Vegetable Stir-fry

Today’s breakfast called for chicken, so I decided to make a delicious stir-fry using frozen chicken breast and whatever vegetables I had on hand, seasoned with a simple soy sauce mixture. It’s a wonderfully nutritious side dish that’s perfect for little ones and incorporates easily into your meal prep!

Main Ingredients

  • 2 chicken breasts (approx. 200-250g)
  • 2 leaves of cabbage
  • A small piece of carrot (child-friendly portion)
  • 1/3 zucchini
  • 1/2 stalk green onion

Special Soy Sauce Dressing

  • 2 Tbsp Snow Crab Soy Sauce
  • 1 Tbsp Tuna Extract
  • 1 Tbsp minced garlic
  • 1 Tbsp cooking oil
  • 1.5 Tbsp agave syrup (or corn syrup)
  • 2 Tbsp Mirin (rice wine for cooking)

Cooking Instructions

Step 1

First, rinse the two chicken breasts under running water. Then, dice them into bite-sized cubes, about 1 to 1.5 cm.

Cut the cabbage into large pieces. Dice or julienne the carrot and zucchini into smaller, child-friendly sizes. Finely chop the green onion. Place the diced chicken breast in a bowl and mix it with 2 tablespoons of Mirin. Let it marinate for a few minutes to remove any gamey odors and tenderize the meat.

Heat a wok or a deep pan over medium-low heat. Add 1 tablespoon of cooking oil and add the chopped green onion. Stir-fry gently until the green onion releases its fragrant aroma, creating green onion oil. Be careful not to burn it.

Once the green onion oil is fragrant, add the marinated chicken breast. Stir-fry over medium heat until the surface of the chicken turns slightly white. This step adds a wonderful depth of flavor.

When the chicken is partially cooked, add the prepared cabbage, carrot, and zucchini. Stir-fry them together. Once the vegetables begin to soften slightly, add the Snow Crab Soy Sauce (2 Tbsp), Tuna Extract (1 Tbsp), minced garlic (1 Tbsp), and agave syrup (1.5 Tbsp). Mix well to coat all the ingredients evenly.

Increase the heat to high and stir-fry quickly until all ingredients and the sauce are well combined. Continue to stir-fry for another 1-2 minutes to ensure the vegetables remain crisp-tender and the chicken breast absorbs the flavors. (Optional: you can add a pinch of black pepper if desired).
