Main Ingredients- 1 cup dried anchovies for broth (heads and guts removed)
- 2 Korean green chili peppers (Cheongyang peppers)
Spicy & Sweet Seasoning- 1 Tbsp mayonnaise
- 1 Tbsp gochugaru (Korean chili powder)
- 2 Tbsp gochujang (Korean chili paste)
- 1 Tbsp soy sauce (jin-ganjang)
- 1 Tbsp cooking wine (Mirin)
- 1 Tbsp oligosaccharide
- 1 Tbsp ginger syrup (or cabbage syrup)
- 1/2 Tbsp sesame oil
- 1/2 Tbsp toasted sesame seeds
- 1 Tbsp mayonnaise
- 1 Tbsp gochugaru (Korean chili powder)
- 2 Tbsp gochujang (Korean chili paste)
- 1 Tbsp soy sauce (jin-ganjang)
- 1 Tbsp cooking wine (Mirin)
- 1 Tbsp oligosaccharide
- 1 Tbsp ginger syrup (or cabbage syrup)
- 1/2 Tbsp sesame oil
- 1/2 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
Let’s start the anchovy dish! First, prepare the dried anchovies for broth. Carefully remove the hard heads and the bitter guts. This step ensures you can fully enjoy the anchovies’ natural umami without any bitterness.
Step 2
Wash the Korean green chili peppers and remove their stems. Then, slice them thinly on an angle. Slicing them about 0.5 cm thick will help them absorb the seasoning well and look appealing.
Step 3
Now, it’s time to remove any fishy smell and enhance the savory flavor. Heat a dry pan over medium-low heat. Add the prepared anchovies and stir gently, being careful not to burn them. Once the anchovies are lightly toasted and golden brown, transfer them to a paper towel to absorb any excess oil.

Add 1 tablespoon of mayonnaise to the toasted anchovies and mix them thoroughly. The mayonnaise will coat the anchovies, adding a soft texture and a rich, nutty flavor.

Let’s make the key seasoning for this delicious seasoned anchovy dish. In a bowl, combine 1 tablespoon of gochugaru, 2 tablespoons of gochujang, 1 tablespoon of soy sauce, 1 tablespoon of cooking wine (Mirin), 1 tablespoon of oligosaccharide, and 1 tablespoon of ginger syrup. Mix them well. (The Altoran recipe usually includes cabbage syrup, but I used ginger syrup instead as it’s easier to find. If you don’t have ginger syrup, you can adjust the sweetness with sugar or more oligosaccharide.)

Finally, add the prepared seasoning, sliced chili peppers, and 1/2 tablespoon of toasted sesame seeds to the mayonnaise-coated anchovies. Gently mix everything together until well combined.
