Cooking Instructions

Step 1

Let’s start by preparing all the ingredients for this delicious pork rib stew.

Step 1

Step 2

This is a crucial step for tender and clean-tasting pork ribs. Properly removing the blood is key to a delicious stew without any gamey odor.

Step 2

Step 3

Rinse the pork ribs thoroughly under cold running water. Place them in a large bowl and gently coat the surface of the ribs with half a tablespoon of sugar.

Step 3

Step 4

Pour 1 can (355ml) of beer over the sugared ribs, ensuring they are fully submerged. Let them soak for about 30 minutes to draw out the blood. Afterward, rinse them lightly under running water and drain well.

Step 4

Step 5

Peel the daikon radish and carrot, then cut them into bite-sized pieces using a decorative round cut. (Cutting the edges round helps prevent them from breaking apart during cooking).

Step 5

Step 6

Chop the scallion into large, 3-4 cm pieces. Slice the red chili peppers diagonally for a pop of color. If using shiitake mushrooms, make decorative cuts on them.

Step 6

Step 7

Time to create the flavor base for our ribs! In a bowl, combine 8 Tbsp soy sauce, 2 Tbsp mirin, 3 Tbsp honey, 1 Tbsp minced garlic, 1 tsp ginger powder (or ginger juice), a pinch of black pepper, and 1/2 packet of apple juice. Stir until the honey is completely dissolved. (Adjust the amount of honey to your preference for sweetness).

Step 7

Step 8

In a wide pot, add the drained pork ribs, followed by all the prepared marinade.

Step 8

Step 9

Pour in 1 cup (approx. 200ml) of water and gently massage the ribs with your hands to ensure the marinade coats them evenly. This helps the flavors penetrate the meat.

Step 9

Step 10

Cover the pot and bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes. It’s a good idea to occasionally lift the lid to stir, ensuring the ribs don’t stick and the sauce doesn’t dry out too much.

Step 10

Step 11

After the ribs have cooked slightly, pour in the remaining 3 cups (approx. 600ml) of water. Add the prepared daikon radish, carrots, and shiitake mushrooms (if using).

Step 11

Step 12

Cover the pot again and simmer over medium heat for about 20 minutes, allowing the vegetables to soften and the sauce to reduce slightly.

Step 12

Step 13

Finally, stir in 1 Tbsp minced garlic and 2 Tbsp sesame oil. Cook uncovered for about 1 more minute until the sauce reaches your desired thick and syrupy consistency. Then, turn off the heat.

Step 13

Step 14

Transfer the beautifully braised pork ribs to a serving plate. Sprinkle with sesame seeds for a final touch, and voilà – your delicious Honey Braised Pork Ribs are ready to impress!

Step 14

Step 15

Every part, from the meat to the vegetables, was incredibly delicious – nothing went to waste! My family raved about how amazing it was, calling it the best rib stew.

Step 15
