Create a refreshing and unique Sujeonggwa Milk Bingsu using Korea’s traditional drink, Sujeonggwa. Bingsu Ingredients- 100ml Sujeonggwa (store-bought or homemade)
- 100ml Milk (adjust to your preference)
- 1 Tbsp Sweetened Condensed Milk (adjust sweetness to taste)
- 1 scoop Vanilla Ice Cream
- Dried Jujubes (for garnish, pitted and thinly sliced)
- Pine Nuts (for garnish)
- Peanuts (roasted, for garnish)
- Mugwort Rice Cakes (tteok) (cut into small pieces)
- 1 Peanut Brittle (crumbled for garnish)
- Bingsu Red Bean Paste (as desired)
Cooking Instructions
Step 1
First, in a wide zip-top bag, combine 1 tablespoon of sweetened condensed milk, 100ml of Sujeonggwa, and 100ml of milk. Press out as much air as possible from the bag, flatten it evenly, and freeze for about 3 hours until solid. This mixture forms the base of your bingsu.
Step 2
Remove the frozen Sujeonggwa and milk mixture from the freezer. Place the bag on a flat surface and gently tap it with a rolling pin, or use your hands inside the bag to gently crush and break up the ice. It’s best to leave some small chunks for a better texture, rather than crushing it too finely.
Step 3
Spoon half of the crushed Sujeonggwa and milk ice into your serving bowl. Add a desired amount of bingsu red bean paste on top. Then, pile the remaining crushed ice generously, and top it again with more red bean paste for a beautiful presentation.
Step 4
Place one generous scoop of vanilla ice cream on top of the bingsu. Arrange the small pieces of mugwort rice cakes around the ice cream to create an even more appealing look.
Step 5
Finally, sprinkle the dried jujubes, pine nuts, and roasted peanuts over the bingsu as toppings. Insert the crumbled peanut brittle and sliced jujubes into the top to garnish. Your delicious Sujeonggwa Milk Bingsu is now complete! Enjoy this special homemade dessert.
