  • 3 Tbsp soy sauce
  • 1/2 Tbsp minced garlic
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp sesame oil
  • A pinch of sugar (adjust to taste)
  • 1/2 Tbsp sesame seeds

First, neatly trim the stems off the Korean green peppers. Place them in a bowl, add 2 tablespoons of vinegar, and let them soak for about 5 minutes. This helps remove impurities and sanitize them. Afterward, rinse them thoroughly under running water and drain them completely in a colander.

Using a fork, gently prick the drained green peppers 2-3 times. This allows the seasoning to penetrate the peppers, resulting in a more flavorful dish.

Transfer the pricked green peppers into a large plastic bag or zip-top bag. Sprinkle 1 tablespoon of sweet rice flour evenly over the peppers. Seal the bag loosely by twisting it, then shake well to ensure the flour coats the peppers thinly and uniformly. If sweet rice flour is unavailable, all-purpose flour can be used as a substitute.
