  • Pinch of vinegar (for boiling)
  • 700ml water
  • 200ml soy sauce
  • 6 Tbsp sugar
  • 1 stalk green onion, finely chopped
  • Sesame seeds, for garnish
  • 1 Tbsp sesame oil
  • 2 Tbsp mentsuyu (Japanese soy-based seasoning; can substitute with extra soy sauce, sugar, and dashi if unavailable)
  • 1 Tbsp mirin (sweet rice wine)
  • 1 Tbsp minced garlic

To achieve the perfect soft-boiled eggs, place the eggs in a pot and cover them with enough water to submerge them. Bring to a boil over high heat and cook for exactly 8 minutes. (Tip: Set a timer as soon as the water starts boiling to ensure precise cooking time!) Adding a pinch of salt and vinegar to the boiling water will make the eggshells much easier to peel later. After cooking, turn off the heat and let the eggs steep in the hot water for about 30 seconds for an even creamier texture.

Immediately transfer the cooked eggs to cold water to cool them down. Once cooled, gently peel the shells. Since the yolks are still semi-liquid, be very careful to avoid breaking the eggs while peeling. (Even with salt and vinegar, peeling can sometimes be tricky! Don’t worry if the eggs aren’t perfectly shaped; they’ll taste just as amazing! 😉)

In a pot or deep bowl, combine 700ml water, 200ml soy sauce, 6 Tbsp sugar, 1 Tbsp mirin, the finely chopped green onion, 1 Tbsp minced garlic, 1 Tbsp sesame oil, and 2 Tbsp mentsuyu.
