Basic Ingredients- 2 bowls of warm rice
- 2 eggs

- 1 Tbsp cooking oil
- 2 Tbsp butter

- 4 Tbsp breadcrumbs
- 2 Tbsp milk
- 1 Tbsp Worcestershire sauce

- Pinch of black pepper
- 2 Tbsp finely minced onion
- 1 Tbsp cold butter (for filling the patties)
Flavorful Gravy Sauce- 1 Tbsp butter
- 1 Tbsp all-purpose flour
- 1 Tbsp tomato ketchup
- 1/4 cup red wine (optional)
- 1 cup water
- 1 Tbsp chicken stock (or dashi broth)
- 1 tsp soy sauce
- 1 tsp Worcestershire sauce
- Pinch of salt
- Pinch of black pepper

Cooking Instructions
Step 1
First, let’s make the hamburger patties. In a large bowl, combine the ground beef and ground pork. Add 1 egg, 2 Tbsp milk, 4 Tbsp breadcrumbs, 1 Tbsp Worcestershire sauce, a pinch of salt, a pinch of black pepper, and 2 Tbsp finely minced onion. Knead the mixture thoroughly with your hands until it becomes cohesive and slightly sticky. This kneading process is crucial for achieving a tender and chewy texture. If the mixture feels too wet, you can add a little more breadcrumbs.
Step 2
Divide the kneaded patty mixture into two portions and shape them into flat, round patties. Create a small indentation in the center of each patty. Place 1 Tbsp of cold butter into the indentation and then carefully enclose it with the meat mixture, shaping it into a ball before flattening it again into a patty. Encasing butter within the patty helps to keep it incredibly moist and juicy during cooking.
Step 3
Heat a pan over medium-low heat and add 1 Tbsp of cooking oil. Carefully place the prepared patties into the hot pan. Cover the pan with a lid and cook for about 7-10 minutes, flipping occasionally, until both sides are golden brown and the patties are cooked through. Adjust the heat as needed to prevent burning.
Step 4
While the patties are cooking, let’s prepare the gravy sauce. In a separate pan, melt 1 Tbsp of butter over medium-low heat. Add the sliced onions and sauté them until they become translucent and start to turn a nice golden brown, releasing a sweet aroma. Sautéing the onions thoroughly will significantly enhance the depth of flavor in your sauce.
Step 5
Once the onions are well sautéed, add another 1 Tbsp of butter to the pan. Stir in 1 Tbsp of all-purpose flour and cook over low heat, stirring constantly, until the flour is well combined and lightly toasted, about 1-2 minutes. This step helps to create a nutty aroma and a smooth base for the sauce.
Step 6
Gradually whisk in 1 cup of water, a little at a time, into the flour mixture. Use a whisk or spatula to ensure there are no lumps and the sauce becomes smooth. It’s best to start with a small amount of water to create a paste before adding the remaining liquid.

Once the sauce base is smooth, add the remaining sauce ingredients: 1 Tbsp chicken stock, 1 Tbsp tomato ketchup, 1 tsp Worcestershire sauce, 1 tsp soy sauce, and a pinch of salt and black pepper. Stir well to combine. Adding 1/4 cup of red wine will impart an even richer and more complex flavor. Simmer gently over low heat until the sauce thickens to your desired consistency.
Step 8
When the sauce reaches a desirable thickness, stir in the sautéed onions you prepared earlier. Mix them well into the sauce. The sweetness of the onions combined with the savory notes of the sauce will create a wonderful harmony. Taste and adjust seasoning with salt or pepper if needed.
