Aromatic Perilla Leaves Delight: An Effortless Recipe

Main Ingredients- 15 fresh perilla leaves (kkaennip)
- 1/4 medium onion
- 1 piece of carrot, about 1cm thick
- 1 green chili pepper (or Korean chili)
Seasoning Sauce- 1 Tbsp salted fermented shrimp (saeujeot)
- 4 Tbsp coarse gochugaru (Korean chili flakes)
- 1 Tbsp minced garlic
- 1 Tbsp maesilcheong (plum extract or syrup)
- 6 Tbsp water
- 1 Tbsp gukganjang (soup soy sauce or regular soy sauce)
- 1/2 Tbsp olive oil (or sesame oil)
- A pinch of toasted sesame seeds
- 1 Tbsp salted fermented shrimp (saeujeot)
- 4 Tbsp coarse gochugaru (Korean chili flakes)
- 1 Tbsp minced garlic
- 1 Tbsp maesilcheong (plum extract or syrup)
- 6 Tbsp water
- 1 Tbsp gukganjang (soup soy sauce or regular soy sauce)
- 1/2 Tbsp olive oil (or sesame oil)
- A pinch of toasted sesame seeds
Cooking Instructions
Step 1
First, wash the perilla leaves thoroughly and pat them dry. Using a kitchen towel to gently dab them will help remove excess moisture. Thinly slice the onion and carrot. Finely chop the green chili pepper to add a hint of spice.
Step 2
In a bowl, combine 1 Tbsp of salted fermented shrimp, 1 Tbsp of minced garlic, 1 Tbsp of maesilcheong, 1 Tbsp of soy sauce, 4 Tbsp of gochugaru, and 6 Tbsp of water. Whisk everything together until you have a well-mixed, flavorful seasoning sauce.
Step 3
Arrange the perilla leaves in the steamer, stacking about 3 leaves at a time, and divide them into three portions. Evenly distribute the sliced onions, carrots, and chili peppers over the perilla leaves. Cover with a lid and steam over medium-low heat until the vegetables are tender.
Step 4
Once the perilla leaves and vegetables are adequately cooked, gently toss them with chopsticks or tongs to ensure the seasoning is evenly distributed. When the ingredients are harmoniously cooked and the fragrant aroma of perilla leaves fills the air, turn off the heat.
