Soomi’s recipes always hit the spot for my taste! I often use her recipes for kimchi, stews, and stir-fries. Her Jeolla-style seasoning is just perfect. Among her many dishes, her kimchi is especially delicious. Today, we’re going to make Chives and Cucumber Kimchi – a delightful dish that’s perfect for any season, especially spring and summer!

Main Ingredients

  • 5 cucumbers (medium-sized)
  • 1/2 onion
  • 100g chives
  • 1/8 carrot (for color)

Seasoning Ingredients

  • 2 Tbsp red chili flakes (adjust to your spice preference)
  • 2 Tbsp fish sauce (anchovy or sand lance)
  • 1 Tbsp plum extract (for sweetness and umami)
  • 1 Tbsp minced garlic
  • 1/4 apple (grated, for sweetness and flavor)

Prepare the fresh vegetables. Wash the cucumbers thoroughly. Also, wash the onion, chives, and carrot.

Cut the cucumbers into bite-sized pieces. Slice them into about 1cm thick half-moons or oblique cuts. Then, add 2 tablespoons of regular salt to the cut cucumbers and mix well. Let them salt for 1 hour, flipping them over halfway through to ensure even salting. After salting, drain the cucumbers in a colander.

Prepare the other vegetables. Slice the onion thinly. Thinly julienne the carrot for a touch of color. Cut the chives into approximately 3-4 cm lengths. (They can be too long to eat comfortably if left longer.)

Now, let’s make the delicious seasoning! In a bowl, add 2 tablespoons of red chili flakes. If you prefer it spicier, feel free to add a little more.

Add 2 tablespoons of fish sauce for a boost of savory flavor. You can use anchovy fish sauce if you prefer.
