Main Ingredients

  • 1 block Firm Tofu (approx. 300g)
  • 1/2 Onion
  • 2 stalks Green Onion (mostly the white parts)
  • 150g Dried Anchovies (small heads, less guts recommended)
  • 1 Tbsp Cooking Oil
  • 1 Tbsp Sesame Oil
  • A pinch of Sesame Seeds
  • 1 Korean Green Chili Pepper (optional, for spice adjustment)

Spicy Braising Sauce

  • 4 Tbsp Gochugaru (Korean chili flakes)
  • 4 Tbsp Soy Sauce
  • 1 Tbsp Maesilcheong (Plum Extract)
  • 1 Tbsp Mirin (Rice Wine)
  • 1 Tbsp Sugar
  • 0.5 tsp Black Pepper
  • 1 Tbsp Minced Garlic

Cooking Instructions

Step 1

Slice the block of firm tofu into 4 equal portions.

Step 1

Step 2

Further divide each of the 4 tofu portions into 3 smaller pieces, creating a total of 12 pieces. Slicing them not too thinly will help them hold their shape without breaking.

Step 2

Step 3

For the anchovies, use ‘Gairi’ or ‘Koba’ anchovies, which have small heads and minimal guts, making them suitable for eating whole and reducing fishy taste. Check the anchovies and remove any rough parts like fins.

Step 3

Step 4

Heat a dry pan over medium heat and toast the anchovies for 3-5 minutes without adding any oil. Toasting removes any fishy odor and makes the anchovies wonderfully crispy, improving their texture.

Step 4

Step 5

Set the toasted anchovies aside. Add 1 Tbsp of cooking oil to the same pan and stir-fry the thinly sliced onion until fragrant. Push the onions to one side of the pan, then arrange the prepared tofu pieces on the cleared space. Place the sautéed onions on top of the tofu.

Step 5

Step 6

Pour the pre-mixed braising sauce evenly over the tofu and onions. Arrange the toasted anchovies, diagonally sliced Korean green chili peppers, and coarsely chopped green onions attractively on top. Finally, add just enough water to reach the height of the tofu pieces along the edge of the pan to allow for simmering.

Step 6

Step 7

Cover the pan and simmer over medium heat for 5-7 minutes, allowing the ingredients to reduce and the flavors to meld. Check periodically to prevent the sauce from burning.

Step 7

Step 8

Once the sauce has thickened and coated the ingredients nicely, turn off the heat. Be careful not to overcook, as the tofu might crumble. Adjust the cooking time based on the desired sauce consistency.

Step 8

Step 9

Drizzle 1 Tbsp of sesame oil over the finished braised tofu and sprinkle with sesame seeds for a fragrant finish.

Step 9

Step 10

Your delicious, moist, and glossy braised tofu is complete! Enjoy it with a warm bowl of rice.
