Savory Braised Potatoes in Soy Sauce

Potatoes are always delicious and versatile! This recipe for braised potatoes in soy sauce brings back fond childhood memories of my mother’s cooking. Making them slightly spicy creates a fantastic side dish that my family loves. If you have potatoes on hand, this is a wonderful make-ahead side dish to try!
Main Ingredients- 2kg potatoes (about 12 medium-sized)
- 3 Korean green chilies (Cheongyang peppers)
Seasoning- 4 Tbsp soy sauce
- 4 Tbsp water
- 1 Tbsp fish sauce (anchovy or similar)
- 1 Tbsp minced garlic
- 2 Tbsp corn syrup or honey
- A pinch of sesame oil (optional)
- A sprinkle of toasted sesame seeds

Cooking Instructions
Step 1
Prepare about 12 medium-sized potatoes, totaling approximately 2kg.

Peel the potatoes thoroughly.

Cut the peeled potatoes into bite-sized pieces. Aim for a size that is easy to eat; cutting them too small may cause them to break apart during cooking.

Place the cut potatoes in a bowl, sprinkle with half a tablespoon of salt, and cover with water. Let them soak for 20 minutes. This step helps to remove excess starch from the potatoes, which prevents them from breaking apart during braising and results in a cleaner flavor. After soaking, rinse the potatoes thoroughly and drain them completely.
Step 5
Heat 2 tablespoons of cooking oil in a preheated pan over medium heat. Add the drained potatoes and stir-fry. Cook while stirring occasionally until the edges of the potatoes turn slightly translucent and lightly golden. Pre-browning the potatoes helps them hold their shape better during the braising process.
Step 6
When the potatoes are about halfway cooked, add 3 tablespoons of water to the pan. This will help steam and soften the potatoes further. Cover the pan and continue to cook over low heat for about 5 more minutes, allowing the potatoes to become tender inside.

Once the potatoes are sufficiently cooked, add the braising liquid ingredients to the pan. Combine 4 tablespoons of soy sauce, 4 tablespoons of water, 2 tablespoons of sugar (adjust sweetness to your preference), and 1 tablespoon of fish sauce.

Add 1 tablespoon of minced garlic and mix everything together to ensure the seasoning is evenly distributed.

Stir in the finely chopped Korean green chilies. Then, add 2 tablespoons of corn syrup or honey to give the dish a glossy sheen and a pleasant chewy texture. For an extra layer of flavor, you can add a little sesame oil at the end, if desired.
