  • 5 cloves of garlic
  • 3 Korean chili peppers (adjust to your spice preference)

  • 2 Tbsp plum syrup (or honey/corn syrup)
  • 2 Tbsp sugar
  • 1 Tbsp corn syrup (or oligodang)
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

To eliminate any fishy smell and enhance the nutty flavor, dry-roast the 150g of anchovies in a dry pan over medium heat for about 4 minutes. Be careful not to burn them. This process will make the anchovies crispier.

After roasting, place the anchovies in a sieve and gently shake to remove any crumbs. You might be surprised by how many crumbs come off! This step is crucial for a neat and pleasant anchovy stir-fry.

Thinly slice the 5 cloves of garlic. Slice the 3 Korean chili peppers diagonally. If you prefer it spicy, include the seeds; if you want a milder flavor, remove the seeds before slicing. Roughly chop or break apart the 3 sachets of mixed nuts into bite-sized pieces. Smaller nut pieces will prevent burning during stir-frying.

Now, let’s make the sauce. In the pan, combine the soy sauce (2 Tbsp), plum syrup (2 Tbsp), sugar (2 Tbsp), and corn syrup (1 Tbsp). Bring this mixture to a simmer over medium heat. Once it starts to bubble, add the sliced garlic, chili peppers, and the prepared nuts. Cook for about 1 more minute, allowing the flavors to meld.
