Main Ingredients- 3 eggplants
- 1 stalk green onion
- 2/3 red chili pepper
Seasoning- 1 tsp fish sauce
- 1 tsp soy sauce (Korean soup soy sauce)
- 1 tsp plum extract
- 2/3 Tbsp red pepper flakes
- 1 tsp fish sauce
- 1 tsp soy sauce (Korean soup soy sauce)
- 1 tsp plum extract
- 2/3 Tbsp red pepper flakes
Cooking Instructions
Step 1
First, trim off the stem ends of the eggplants. Also, remove any attached leaves for a cleaner presentation.
Step 2
Place the prepared eggplants whole into a lightly oiled frying pan. Grill over medium-high heat, turning occasionally, until they are nicely browned and slightly charred on all sides. Continue grilling until the eggplant is tender.
Step 3
If there are any burnt spots on the grilled eggplant, gently scrape them off with a knife or remove them for a cleaner look. This step ensures a more refined final dish.
Step 4
Allow the grilled eggplant to cool down slightly. Once it’s comfortable to handle, tear the eggplant into bite-sized pieces by hand or using chopsticks. Tearing preserves the desirable chewy texture.
Step 5
Finely chop the red chili pepper and green onion. For the chili pepper, you can remove the seeds to control the spiciness. The chopped green onion will add a fresh aroma.
Step 6
In a small bowl, combine all the seasoning ingredients: fish sauce, soy sauce, plum extract, and red pepper flakes. Stir well to create a harmonious dressing.
Step 7
Pour the prepared seasoning over the torn eggplant. Gently toss and mix with your hands, ensuring the seasoning coats every piece of eggplant evenly. Be careful not to mash the eggplant; mix gently.
Step 8
Finally, add the chopped red chili pepper, green onion, crushed sesame seeds, and sesame oil. Toss everything together lightly one last time. Your delicious grilled eggplant salad is ready! It can be enjoyed immediately or chilled in the refrigerator for a refreshing taste.
