Ingredients- 8 hard-boiled eggs
- 1/2 cup soy sauce (approx. 100ml)
- 200ml water
- 1 tsp sugar
- 2-3 chili peppers (e.g., Korean green chili or red chili)
- A pinch of whole peppercorns (or ground pepper)

Step 1
Today, we’re making universally loved, savory and sweet braised eggs! They are an absolutely perfect side dish for rice.
Step 2
First, place the 8 prepared eggs in a pot and cover them with enough water to submerge. Bring to a boil and cook until hard-boiled. Starting with cold water can help prevent the eggshells from cracking when they are added to the pot. Boil for about 10-12 minutes.

Immediately transfer the hard-boiled eggs to a bowl of cold water to cool them down completely. This makes peeling the eggshells much easier. Once peeled, pat them dry.
Step 4
In the pot, combine 200ml of water, 1/2 cup (approx. 100ml) of soy sauce, 1 tsp of sugar, and a pinch of whole peppercorns (or ground pepper). Mix well to create the braising liquid. This forms the foundational flavor of the dish.

Prepare the chili peppers by removing the stems and slicing them diagonally. If you enjoy a bit of spice, use Korean green chilies; for added color, red chilies work well.

Once the braising liquid begins to simmer, add the peeled hard-boiled eggs and the sliced chili peppers. Gently roll the eggs around in the liquid to ensure they are evenly coated. Let it simmer over medium-low heat for about 15-20 minutes, or until the eggs have absorbed the flavors. It’s important to occasionally turn the eggs to ensure they brown uniformly.
