First, gently rinse the acorn jelly (1 piece) under running water. Then, cut it into bite-sized pieces (about 1.5cm thick and long). If the jelly is too cold, it can be difficult to cut, so letting it sit at room temperature for a bit will make slicing easier.

Wash the cucumber, remove the ends, and slice it lengthwise into strips similar in thickness and length to the acorn jelly. Peel the onion (1/2) and thinly slice it into shreds. Wash the lettuce leaves thoroughly under running water, pat them dry, and tear them into bite-sized pieces by hand.

If you prefer less spiciness or want to reduce the pungent flavor of the onion, soak the shredded onion in cold water for about 5 minutes, then squeeze out the excess water. This step will make the onions extra crisp.
