Chewy Clam and Chives Pancake
Bursting with Ocean Flavor! A Special Chewy Clam and Chives Pancake with Cockle and Clam Meat
This is a recipe for a clam and chives pancake (buchimgae) with a wonderfully savory and chewy texture. By adding both cockle and clam meat, it delivers a rich taste of the sea, making it a delightful dish perfect as a side or snack.
Main Ingredients- Fresh chives 250g
- Shelled clam meat (mixed cockle and clam meat) 200g
- Pancake mix 8 Tbsp
- Cornstarch or potato starch 2 Tbsp
- Salt 1/2 Tbsp
- Cold water 200ml
- Cheongyang chili peppers (to taste)
Cooking Instructions
Step 1
Prepare the ingredients: We’re using pre-shelled cockle and clam meat for convenience. Using fresh seafood will enhance the depth of flavor.
Step 2
Prepare the vegetables: After washing the chives thoroughly, cut them into approximately 3cm lengths for easy eating. If you like a bit of spice, deseed the Cheongyang chili peppers and finely chop them.
Step 3
Make the batter: In a large bowl, combine the prepared chives, clam meat, pancake mix, starch, salt, and cold water. Mix well until there are no lumps, creating a smooth batter. Adjust the water quantity if the batter is too thick or thin.
Step 4
Cook the pancake: Heat a frying pan over medium heat and add a generous amount of cooking oil. Scoop a ladleful of batter and spread it thinly in the pan. Be careful not to overcrowd the pan.
Step 5
Cook evenly: Reduce the heat to medium-low. Once the edges of the pancake start to look golden brown, carefully flip it with a spatula and cook the other side until golden brown as well. Ensure the seafood is cooked through by cooking for an adequate amount of time.
