Braised Green Peppers with Rice Cakes
Vegan Recipe: Steamed Green Peppers with Tteokbokki-style Glazed Rice Cakes
Transform freshly picked green peppers from a friend’s garden into a delicious and satisfying vegan meal, paired with chewy rice cakes. This recipe creates a delightful dish that can serve as a hearty breakfast alternative or a wonderful side dish.
Main Ingredients- 160g Korean green peppers (Kkwari Gochu)
- 200g Tteokbokki rice cakes (Garaetteok)
- 3 Tbsp All-purpose flour
Seasoning Sauce- 7 Tbsp Soy sauce (Jinganjang)
- 1/2 Tbsp Minced garlic
- 3 Tbsp Oligodang (corn syrup/oligosaccharide)
- 1 Tbsp Gochugaru (red pepper flakes)
- 1 Tbsp Sesame oil
- A pinch of toasted sesame seeds
- 100ml Water
- 7 Tbsp Soy sauce (Jinganjang)
- 1/2 Tbsp Minced garlic
- 3 Tbsp Oligodang (corn syrup/oligosaccharide)
- 1 Tbsp Gochugaru (red pepper flakes)
- 1 Tbsp Sesame oil
- A pinch of toasted sesame seeds
- 100ml Water
Cooking Instructions
Step 1
Begin by trimming the stems off the Korean green peppers and washing them thoroughly. After draining excess water, place the peppers in a plastic bag. Add the 3 tablespoons of all-purpose flour and shake the bag well to ensure the flour coats the peppers evenly. This step helps create a tender and moist texture when steamed.
Step 2
Prepare a steamer or a pot with a steaming rack. Add water to the pot and bring it to a boil. Once the water is boiling, carefully place the flour-coated green peppers into the steamer. Steam for about 5 minutes, then turn off the heat and remove the peppers.
Step 3
Transfer the steamed green peppers to a cooling rack and let them cool for about 3-5 minutes. Allowing them to cool slightly prevents them from becoming mushy during the braising process.
Step 4
While the peppers are cooling, prepare the rice cakes. Slice the garaetteok into bite-sized pieces, roughly the size of your thumbnail. If the rice cakes are hard, you can briefly soak them in hot water to soften them before cooking.
Step 5
In a frying pan, combine all the seasoning sauce ingredients (soy sauce, minced garlic, oligodang, gochugaru, and water) along with the sliced rice cakes. Bring to a simmer over medium-high heat and cook for 3-5 minutes, or until the sauce thickens slightly and coats the rice cakes. Stir occasionally to prevent sticking.
Step 6
Finally, add the steamed green peppers to the pan with the braised rice cakes. Stir in the sesame oil and toasted sesame seeds. Mix gently to combine everything. This dish, with its appealing appearance and delicious flavor, makes for a satisfying meal or a wonderful side dish!
