Bibim Naengmyeon with a Flavorful Pork Stir-Fry Sauce

Main Ingredients- 2 bundles of somyeon noodles (approx. 2 servings)
- 150g ground pork
- 1/2 cucumber
- 1/2 onion
- 1 hard-boiled egg
- 2 Tbsp chopped green onion
- 1 tsp minced garlic
- 1 tsp minced ginger
- 1 Tbsp vinegar
- 1 tsp sesame oil
- A pinch of chili threads
Pork Stir-Fry Sauce- 2 Tbsp gochujang (Korean chili paste)
- 1 Tbsp soy sauce
- 2 Tbsp maesilcheong (Korean plum extract)
- 2 Tbsp gochujang (Korean chili paste)
- 1 Tbsp soy sauce
- 2 Tbsp maesilcheong (Korean plum extract)
Cooking Instructions
Step 1
First, prepare the vegetables to accompany your bibim naengmyeon. Wash the cucumber and onion, remove the seeds, and then thinly julienne them. It’s important to keep them crisp for texture.
Step 2
Heat a pan over medium heat and add a little cooking oil. Sauté the chopped green onion, minced ginger, and minced garlic until fragrant. Once the aroma is released, add the ground pork and stir-fry, breaking it up so it doesn’t clump together.
Step 3
Once the pork is fully cooked, add the prepared sauce ingredients (2 Tbsp gochujang, 1 Tbsp soy sauce, 2 Tbsp maesilcheong) and continue to stir-fry for another 1-2 minutes until the pork and sauce are well combined. Be careful not to burn the sauce. Turn off the heat and stir in 1 Tbsp of vinegar for an extra burst of flavor.
Step 4
Drain the boiled somyeon noodles and immediately rinse them under cold running water to cool them down completely. Rinsing under cold water makes the noodles chewy and firm. Ensure all excess water is drained using a colander, otherwise, your bibim naengmyeon might turn out watery.
Step 5
Place the drained somyeon noodles in a bowl and generously top with the freshly stir-fried pork mixture. Use chopsticks or tongs to thoroughly toss the noodles and sauce together, ensuring the sauce evenly coats the noodles. It’s crucial for the sauce to be well-absorbed.
Step 6
Arrange the mixed noodles nicely in a serving bowl. Top generously with the julienned cucumber and onion, and garnish with a halved hard-boiled egg.
Step 7
