It’s great as a side dish for rice, but it also makes a fantastic snack with drinks or an impressive dish for guests. If seasoned lightly, it can even serve as a satisfying meal. Ingredients

  • 100g smoked duck, cut into bite-sized pieces
  • 100g potato hand-pulled noodles (fresh or dried, prepare according to package instructions)
  • 1/4 onion, thinly sliced
  • 1 bok choy, leaves separated and washed
  • 1 Cheongyang pepper, finely chopped (for a spicy kick)
  • 1 red chili pepper, seeds removed and finely chopped (for color)
  • 3 cloves garlic, thinly sliced
  • 1 Tbsp ground perilla seeds (for nutty flavor)

Seasoning

  • 1 tsp soy sauce (for umami)
  • 1 tsp oyster sauce (for rich flavor and shine)
  • 1 tsp sesame oil (for aromatic finish)

Cooking Instructions

Step 1

First, cut the smoked duck into bite-sized pieces, about 2-3 cm. Wash the bok choy leaves thoroughly and separate them, then pat them dry.

Peel and thinly slice the onion. Slice the garlic thinly and finely chop the Cheongyang pepper and red chili pepper. (Adjust the amount of Cheongyang pepper to your spice preference.)

Bring a pot of water to a boil and cook the potato hand-pulled noodles for about 3-4 minutes until they float, indicating they are cooked. Immediately drain them and rinse under cold water to enhance their chewy texture. Drain well in a sieve.

Heat a pan over medium heat and add the smoked duck. Stir-fry until it releases some of its fat. Then, add the sliced onion and garlic, and continue to stir-fry for about 1-2 minutes until the onion becomes translucent and the garlic is fragrant.

Add the drained hand-pulled noodles to the pan. Stir-fry with the duck and onions for about 1-2 minutes, allowing the noodles to absorb some of the flavors.

Add the bok choy leaves, chopped Cheongyang pepper, and red chili pepper to the pan. Pour in the soy sauce and oyster sauce, and stir-fry until everything is well combined. It’s best to stir-fry just until the bok choy wilts slightly to maintain its crisp texture.

Once the bok choy has slightly wilted, add the ground perilla seeds and sesame oil. Stir briefly to combine everything evenly. Perilla seeds can become bitter if overcooked, so add them at the very end and stir just for a moment.
