Step 2
First, let’s prepare a fried egg. Heat a frying pan over high heat for 2 minutes, then add 1 tablespoon of cooking oil. Carefully crack an egg into the pan and fry it until the yolk is intact, flipping to cook both sides to your desired doneness (runny or firm).
Step 3
Next, prepare the vegetables. Slice the onion into 0.5cm thick pieces. Slice the chili pepper(s) similarly. Finely chop the scallions to use as a garnish later.
Step 4
Now, let’s make the savory sauce that adds depth of flavor. In a bowl, combine 4 tablespoons of kimchi juice, 2 tablespoons of gochujang, 1/2 tablespoon of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of honey, 1 tablespoon of mirin, 1/2 tablespoon of minced garlic, 1 tablespoon of gochugaru, 4 tablespoons of water, and 1/2 teaspoon of black pepper. Mix thoroughly until well combined and smooth. Using kimchi juice adds a refreshing and clean spicy flavor to the stir-fry sauce.
Step 5
Let’s begin cooking! Preheat your pan over high heat for 3 minutes, then add 1 tablespoon of cooking oil. Add the pork neck slices and stir-fry them until they develop a nice golden-brown color and release their aroma. Once the pork is browned, add the sliced chili peppers, onions, and chopped kimchi. Continue to stir-fry until all the ingredients are well combined and tender. (Tip: Using pre-sliced pork neck meant for stir-fries or bulgogi makes preparation easy. Pork shoulder is also a great alternative.)
Step 6
Now, add the udon noodles and the prepared sauce to the pan. Stir-fry everything together over high heat for about 2-3 minutes until the noodles are coated and heated through. To prepare the udon, simply rinse them under warm running water to separate the noodles; there’s no need to pre-boil them. This allows them to absorb the sauce beautifully.
Step 7
For the final touch, reduce the heat slightly and drizzle in 1/2 tablespoon of sesame oil. Give it a final quick toss to incorporate the aroma. Transfer the delicious kimchi pork stir-fry to a serving plate. Garnish with the chopped scallions and the prepared fried egg for an appealing presentation. Your flavorful and spicy pork stir-fry is now ready!
Step 8
The kimchi juice really brings out a wonderfully spicy and deep umami flavor. Adding udon noodles makes this dish incredibly filling, and serving it with rice creates a generous meal for two. If you love noodles, this dish is fantastic as a standalone meal, similar to a spicy noodle stir-fry. Using tender and flavorful pork neck ensures a delicious and melt-in-your-mouth experience.
