Hello everyone! Today, I’m bringing you a recipe for a spicy and sweet ‘Chicken Tteokbokki Stew’. Are you watching the popular YouTube channel ‘Ddo-gan-jip’? I find it so entertaining! Apparently, the Tteokdoritang place in Gangnam Station is super hot right now, with crazy long waiting lines. But don’t worry! You can recreate that amazing flavor right in your own kitchen, and I promise you won’t regret it… seriously!

Main Ingredients

  • 1 pack of chicken pieces for stew (approx. 1kg)
  • Vienna sausages, as desired
  • 300g tteokbokki rice cakes
  • 1L water

Spicy & Sweet Sauce

  • 6 Tbsp soy sauce
  • 4 Tbsp gochugaru (Korean chili flakes)
  • 2 Tbsp sugar
  • 2 Tbsp corn syrup (oligo-dang)
  • 4 Tbsp curry powder
  • 5 Tbsp gochujang (Korean chili paste)
  • 2 Tbsp cooking wine (mirin)
  • Pinch of black pepper

Cooking Instructions

Step 1

Rinse the chicken pieces intended for stew thoroughly under cold running water. This is the first step to remove any unwanted gamey smell from the chicken.

Bring a pot of water to a boil. Add the rinsed chicken and blanch for about 5 minutes. This blanching process helps remove impurities and blood, ensuring a cleaner taste. After blanching, rinse the chicken under cold water and drain well.

Now, let’s make the delicious sauce! In a large bowl, combine 6 Tbsp soy sauce, 4 Tbsp gochugaru, 2 Tbsp sugar, 2 Tbsp corn syrup, 4 Tbsp curry powder, 5 Tbsp gochujang, 2 Tbsp cooking wine, and a pinch of black pepper. Mix everything thoroughly until well combined. Your golden ratio sauce is ready!

Pour 1 liter (1000ml) of water into a pot. Add the blanched chicken and all of the prepared sauce. Give it a good stir to ensure the sauce coats the chicken evenly.

Next, add the chewy tteokbokki rice cakes. Rinsing them under cold water before adding can help prevent them from sticking together.

Now’s the time to add your desired extra ingredients! Throw in Vienna sausages and any other toppings you love, such as ramen noodles, fish cakes, or vegetables. Loading it up makes it even more delicious!

Finally, sprinkle a little more black pepper on top. Bring the stew to a boil over high heat, then reduce the heat to medium and simmer for 15 minutes. This allows the chicken to become tender and the flavors to meld beautifully.
