Ingredients- 1/2 mackerel fillet (cleaned)
- 1/6 daikon radish (about 150g)
- 1/2 onion
- 1 stalk green onion
- 500ml rice water
- 5-6 Tbsp soy sauce (use baby soy sauce or low-sodium soy sauce)
- 3 Tbsp cooking sake (like Mirin)
Cooking Instructions
Step 1
Finely chop the onion into small, thin pieces that are easy for babies to eat, about 1cm in size. Slice the daikon radish thinly into 0.5cm thick rounds. If the slices are too thick, the seasoning may not penetrate well, and it will take longer to cook. Cut the green onion into 5cm lengths or split them lengthwise.
Step 2
First, arrange the sliced daikon radish at the bottom of the pot. Place the prepared mackerel on top of the radish, followed by the chopped onion and green onion. Layering the ingredients like this makes it incredibly easy to prepare a delicious baby food side dish without needing to sauté or fry anything separately.
Step 3
Pour 500ml of rice water into the pot. Rice water helps to remove the fishy smell and makes the broth smoother. Then, add 5-6 tablespoons of soy sauce and 3 tablespoons of cooking sake to create the braising liquid. Adjust the amount of soy sauce according to your baby’s age and eating habits.
Step 4
The key to a delicious Mackerel and Radish Braise is effectively eliminating the fishy odor. Therefore, keep the lid off the pot while cooking. Once the liquid comes to a rolling boil, reduce the heat to medium. Be careful not to stir the fish too much, as it can break apart easily. Instead of stirring, gently ladle the braising liquid over the top of the fish to ensure the seasoning is evenly distributed and the fish cooks gently.
Step 5
Wondering how to tell if it’s cooked? It’s simple! Gently pierce the radish with chopsticks. If the chopsticks slide in smoothly, the radish is tender and well-cooked. Continue to simmer over medium heat for about 15-20 minutes, or until the radish is very soft and infused with flavor, to complete your Mackerel and Radish Braise.
