  • 2/3 cup well-fermented kimchi, finely chopped
  • 2 bowls of warm cooked rice
  • Shredded mozzarella cheese, to your liking

Finely chop the kimchi into bite-sized pieces. Chopping the kimchi finely helps it mix well with the rice, making it even more delicious. Adjust the sugar amount based on how sour your kimchi is.

Heat a generous amount of cooking oil in a pan over medium heat. Add the chopped green onion and sauté until it becomes lightly golden and fragrant. Cooking the green onion first releases its sweet aroma and adds depth of flavor.

Once the green onion is lightly golden, add the chopped kimchi and 1 tablespoon of sugar. Stir-fry thoroughly over medium heat. It’s important to cook the kimchi until it softens and the sweetness blends in.

When the kimchi is sufficiently cooked, add 1 tablespoon of soy sauce around the edges of the pan and stir-fry with the kimchi. The soy sauce caramelizing slightly adds a deep flavor. Finally, add 2 tablespoons of gochugaru and stir-fry until well combined with the kimchi.

Add 2 bowls of warm cooked rice and 1 tablespoon of sesame seeds to the stir-fried kimchi mixture. Gently stir-fry with a spatula, being careful not to mash the rice grains. The key is to mix evenly so that each grain of rice is coated with the seasoning. (Tip: I prefer to add plenty of sesame seeds instead of sesame oil, as I find fried rice can sometimes feel too oily. You can add a little sesame oil to your preference.)

Spread the well-fried kimchi fried rice evenly in the pan. Sprinkle a generous amount of shredded mozzarella cheese over the top. Cover the pan with a lid and let it cook over low heat for 1-2 minutes, or until the cheese is completely melted.
