During a visit to my late father-in-law’s memorial site after the ancestral rites, I discovered an abundance of fresh Aralia sprouts (dureup) that had beautifully emerged. Even though our elders were no longer with us, nature continued its cycle, blossoming and bearing fruit with serene indifference. This experience inspired me to create a special ramen dish that captures the essence of spring’s vibrant flavors. This recipe infuses the simple pleasure of ramen with the delicate, aromatic taste of dureup, offering a unique culinary experience.

  • 1 packet of instant ramen (choose your favorite brand)
  • 1 fresh egg
  • 1 handful of cleaned Aralia sprouts (dureup, approx. 50g)

Begin by preparing the Aralia sprouts. Trim the tough ends of the sprouts. If you prefer a softer texture, you can lightly blanch them first. To help them absorb flavors better, make a small cross-shaped cut (+) at the tip of each sprout. This preparation step ensures that the unique, fragrant essence of the dureup is well-infused into the ramen, enhancing the overall flavor profile and texture.

Now, let’s cook the ramen. Pour 600ml of water (about 3 standard Korean tea cups) into a pot and bring it to a rolling boil over high heat. Once the water is boiling vigorously, add the soup base and dried vegetable packet that came with your ramen, followed by the ramen noodles. Next, add the prepared Aralia sprouts. As the ramen cooks with the dureup, a wonderful, fresh aroma will fill your kitchen, deepening the ramen’s savory notes.

Check the ramen noodles to ensure they are cooked to your desired tenderness. For the final step, gently crack an egg into the boiling broth. You can add the egg whole for a poached effect or lightly whisk it before adding for a more dispersed richness. Adjust the heat to low or let it simmer briefly until the egg reaches your preferred doneness. Once all the ingredients have melded together, ladle the fragrant Aralia sprout ramen into a bowl and enjoy this delightful taste of spring!
