Spicy and Sweet Braised Pork Ribs

Main Ingredients

  • Pork ribs 600g (cut into bite-sized pieces)
  • 1 Onion (cubed)
  • 1 Potato (cubed)
  • 1 Green onion (cut into large pieces)
  • 1 Shiitake mushroom (cut into large pieces, or your preferred mushroom)
  • 10 cloves Garlic (ends trimmed)

Spicy and Sweet Seasoning

  • 5 Tbsp Soy sauce
  • 5 Tbsp Sugar
  • 1 Tbsp Sesame oil
  • 1 Tbsp Gochugaru (Korean chili powder – adjust for spice level)
  • 1 pinch Salt
  • 1 pinch Black pepper
  • 500ml Water

Cooking Instructions

First, rinse the pork ribs under cold water for about 10 minutes to remove any blood. Trim the tough ends off the garlic cloves. Cube the onion, potato, and cut the green onion and mushroom into larger pieces. Preparing the ingredients like this makes the cooking process much smoother.

Heat a little cooking oil in a pan over medium heat. Add the prepared pork ribs and stir-fry until they are golden brown on all sides. Searing the ribs first helps to lock in their juices, ensuring a more tender result.

After about 5 minutes of cooking the ribs, add the cubed vegetables (onion, potato) and garlic, except for the mushroom and green onion. Stir-fry briefly until the vegetables are slightly tender. Then, pour in 500ml of water. Simmering them together will allow the flavors to meld beautifully into the broth.

Bring the mixture to a boil over high heat, then reduce to medium-low once the water has reduced by about half. At this stage, add the pre-mixed seasoning sauce and the reserved mushroom and green onion. Cover the pot and let it simmer gently for about 10 minutes, allowing the flavors to deepen and the sauce to thicken slightly. Once the sauce is rich and glossy, it’s ready to be served.
