Main Ingredients- 250g beef for soup (brisket or shank recommended)
- 300g Korean radish (about 1/4 of a medium radish)
- 2/3 stalk of green onion
Cooking Instructions
Step 1
Soak the beef for soup in cold water for about 30 minutes to 1 hour to remove any blood. Removing the blood thoroughly ensures a clean broth without any gamey odors. Gently pat the beef dry with paper towels.
Step 2
Peel the Korean radish and slice it thinly into bite-sized, uniform pieces (about 0.5cm thick). Slicing them not too thick will make them easier for children to eat.
Step 3
Finely chop the green onion. The white parts add a refreshing taste, while the green parts contribute a fragrant aroma, so mix them appropriately.
Step 4
To enhance the depth of flavor, we’ve prepared an anchovy and kelp broth. Boiling anchovies and kelp and then straining them will create a delicious broth. (You can also use plain water or rice water.)
Step 5
Heat 1 tablespoon of sesame oil in a pot over medium-high heat. Add the blood-removed beef and stir-fry until the surface is evenly browned.
Step 6
Once the beef is browned, add 1 tablespoon of soup soy sauce. Lightly stir and continue to cook for about 2 minutes, allowing the soy sauce to coat the beef. This step enhances the beef’s savory and rich flavor.
Step 7
Add the sliced Korean radish to the pot and stir-fry it along with the beef for about 1-2 minutes, allowing the radish to absorb some of the oil and seasoning.
Step 8
When the radish begins to turn slightly translucent, pour in all of the prepared anchovy-kelp broth. If you don’t have enough broth, supplement with plain water. Bring to a boil over high heat, then reduce to medium heat once it starts bubbling.
Step 9
Once the broth is boiling, add 1 tablespoon of tuna extract and 1/2 tablespoon of minced garlic to season. Tuna extract adds a deeper, cleaner flavor to the soup.
Step 10
Simmer over medium heat for about 15-20 minutes, or until the radish is tender and the flavors have melded. Once the radish is translucent and soft, adjust the seasoning with more soup soy sauce or salt if needed. Finally, add the chopped green onions and simmer briefly before serving.
