On days when even instant noodles feel too hot, this Kimchi Mari Guksu is the perfect solution! I made it because I was craving it. Using pre-made naengmyeon broth makes it incredibly easy to achieve a deliciously tangy and refreshing cold noodle dish at home that rivals restaurant quality.

Main Ingredients

  • 1 serving of somyeon noodles (approx. 100g)
  • 1 egg
  • 1 packet of store-bought naengmyeon broth (chilled)
  • 1 cup kimchi brine (approx. 200ml)
  • A small amount of kimchi (finely chopped)
  • Pickled radish wraps (optional, to taste)

Kimchi Seasoning

  • 0.5 Tbsp sugar
  • 0.5 Tbsp sesame oil
  • A pinch of sesame seeds

Broth Seasoning

  • 1 Tbsp sugar
  • 1 Tbsp vinegar

Cooking Instructions

Step 1

First, bring a pot of water to a rolling boil for cooking the egg and another pot for the somyeon noodles over high heat. This helps to speed up the cooking process for both.

Once the water is boiling vigorously, gently spread the somyeon noodles in a fan shape as you add them to the boiling water. This prevents the noodles from clumping together and ensures they cook evenly.

While the noodles are cooking, place the egg in another pot and boil it until hard-boiled. You can also opt for a soft-boiled egg if you prefer.

When the noodle water starts to boil, add about 1 cup of cold water. Once it boils again, add another cup of cold water. Repeating this process 2-3 times will result in perfectly chewy and firm noodles.

Once the somyeon noodles are cooked to your liking, immediately transfer them to a bowl of cold water. Rub them gently with your hands under the cold running water to rinse off excess starch. This ensures the noodles remain distinct and have a clean, refreshing taste.

Now, let’s prepare the seasoned kimchi. In a small bowl, combine the finely chopped kimchi with 0.5 Tbsp sugar and 0.5 Tbsp sesame oil. Gently mix them together until well combined. Finally, sprinkle in some sesame seeds for an extra nutty aroma. This creates a delicious kimchi topping.

Let’s make the Kimchi Mari broth. Pour 1 cup of chilled kimchi brine into a bowl. Add 1 Tbsp sugar and 1 Tbsp vinegar to balance the tangy and sweet flavors. Stir well, then pour in the entire packet of chilled store-bought naengmyeon broth. Stir everything together to create the refreshing Kimchi Mari broth. Feel free to adjust the seasoning to your preference.
