Main Ingredients

  • 6 eggs
  • 1/2 onion
  • 2 Cheongyang peppers
  • 1/2 red chili pepper
  • A little bit of green onion
  • A pinch of black pepper

Seasoning Mix

  • 1 Tbsp Gochujang (Korean chili paste)
  • 4 Tbsp Matganjang (Savory soy sauce)
  • 1 tsp sugar
  • 1 Tbsp Mirin (rice wine)
  • 1 tsp Buldak sauce
  • 50ml water

Cooking Instructions

Step 1

First, boil 6 eggs in a pot of water for about 10-12 minutes until hard-boiled. Once cooked, cool them under running cold water, then carefully peel off the shells. Handle the peeled eggs gently to prevent them from breaking.

Step 1

Step 2

Roughly chop the onion. Finely chop the Cheongyang peppers and red chili peppers, removing the seeds first. Slice the green onion thinly. Preparing these ingredients will add depth of flavor and texture to the dish.

Step 2

Step 3

In a deep pan or pot, combine all the seasoning ingredients: 1 Tbsp Gochujang, 4 Tbsp Matganjang, 1 tsp sugar, 1 Tbsp Mirin, 1 tsp Buldak sauce, and 50ml of water. Stir everything together until well combined.

Step 3

Step 4

Once the seasoning mix begins to simmer, add the boiled eggs, chopped onion, and sliced green onion to the pan. Let it simmer, turning the eggs occasionally to ensure they absorb the flavors evenly.

Step 4

Step 5

Allow the sauce to reduce and thicken, coating the eggs with a glossy sheen. Gently stir to ensure the eggs, onions, and green onions are well coated with the sauce. Simmering over low heat will help the flavors penetrate deep into the eggs.

Step 5

Step 6

In the final step, add the finely chopped Cheongyang and red chili peppers and mix them in. Continue to cook for another minute or so to infuse the dish with their spicy kick and vibrant color. Avoid overcooking the peppers, as they can become too soft.

Step 6

Step 7

Turn off the heat and add a pinch of black pepper according to your preference for extra aroma. Serve the spicy red braised eggs hot, either spooned over steamed rice or as a delicious side dish. Enjoy this ultimate rice thief!
