  • Cheongju (or cooking wine): 1 part

Cooking Instructions

Step 1

Rinse the tteokbokki rice cakes in cold water and drain them well. Heat 1 tablespoon of olive oil in a pan over low heat and add the rice cakes. Stir-fry them gently until they soften slightly and don’t stick together. This step helps to prepare the rice cakes for the sauce.

Step 1

Step 2

In a small bowl, combine all the sauce ingredients according to the specified parts. Whisk them together thoroughly until smooth, ensuring there are no lumps, especially from the gochugaru. Properly mixing the sauce is key to a delicious flavor.

Step 2

Step 3

Clean and prepare the squid. Slice the squid body into bite-sized strips. Place the sliced squid in a bowl, add 1 tablespoon of cheongju, toss gently, and let it marinate for about 5 minutes to eliminate any fishy smell. Add the marinated squid to the pan with the rice cakes and stir-fry together until the squid turns opaque (white).

Step 3

Step 4

Reduce the heat to medium-low. Pour the prepared sauce into the pan with the rice cakes and squid. Stir well with a spatula to ensure the sauce coats everything evenly. Continue to cook for 2-3 minutes, stirring occasionally, until the sauce thickens slightly and clings to the ingredients.

Step 4

Step 5

Finally, generously sprinkle mozzarella cheese over the tteokbokki. Cover the pan with a lid and let it cook on low heat until the cheese is completely melted and gooey. The melted cheese will add a wonderful richness and texture to the dish.

Step 5

Step 6

Transfer the tteokbokki with the melted cheese to a serving plate. Serve immediately while hot to enjoy the perfect combination of chewy rice cakes and stretchy, gooey cheese. Enjoy your delicious Squid and Cheese Tteokbokki!
