Experience the delightful crispiness of round zucchini in this simple stir-fry. Seasoned solely with salted shrimp (saeujeot), it boasts a wonderfully cool and clean flavor that’s perfect as a side dish. Quick, easy, and incredibly delicious!

Cooking Instructions
Step 1
First, wash the round zucchini thoroughly under running water. Trim off the ends and slice it thinly into fan shapes, about 0.5cm thick. Slicing them thinly ensures they cook evenly and quickly.
Step 2
Peel and thinly slice the onion into half-moons. Wash the scallions and finely chop them to be used as a garnish later.
Step 3
In a pot or deep pan, combine the sliced zucchini and onion. Add the minced salted shrimp, minced garlic, perilla oil, and 200ml of kelp broth (or dashi broth). Cover the pot and simmer over medium heat for about 10-15 minutes, or until the zucchini becomes translucent and is about 95% cooked.
Step 4
To ensure the seasoning is distributed evenly and to prevent sticking, it’s a good idea to gently stir the mixture once or twice while it’s simmering. This helps all the flavors meld beautifully.
Step 5
Once the zucchini is almost tender, turn off the heat. Sprinkle in a pinch of black pepper and add the chopped scallions. The residual heat will finish cooking the ingredients perfectly.
Step 6
Transfer the cooked zucchini stir-fry to a serving dish. Allow it to cool down slightly.
Step 7
While delicious served warm, this dish truly shines when chilled. Refrigerate it for a cleaner, more refreshing taste. It’s a fantastic make-ahead side dish!
